Enabling Pilot Assist and Adaptive Cruise Control
Can anyone tell me what settings I need to change to have a 2024 Polestar 2 continue moving in traffic jams instead of stopping after 3-5 seconds?

By design, the ACC / PA deactivates after being stand still for more than about 5 seconds. If the car is stopped less than that, it resumes automatically. 
To resume ACC/ PA after stopping more than 5 seconds, you will need to gently press on the gas pedal or use the resume button on the steering wheel. There is no configuration to disable or extend that 5 second duration.   

Since you mentioned   2024 Polestar 2, you should have creeping mode.

I am trying to start the assistant in my car, but there are errors. In the wizard I have an ABS and SRS error. I do not know what I can manually turn on to check. I have momentum with several options.

I have a 2019 XC60 T6 Inscription that came with Pilot Assist (PA) from the factory. However, it doesn't function as expected, at least in my experience. The system is unreliable. Today, on a clear day with perfect road markings and a slight curve, it drifted entirely over the line into the oncoming traffic lane. If I hadn't intervened by steering it back, it would have continued straight into the ditch. This happens frequently, and it seems somewhat reliable only at speeds below 40 km/h.

Has anyone else encountered a similar issue? Is there a way to fix this problem? Unfortunately, the dealership in my country is not helpful, so getting a software upgrade is not an option for me.

If you have the PA from factory, You might install the official upgrade from VIDA. part number 32259216 It was around $150 USD.

I would gladly buy VIDA subscription and all available upgrades, but if I am not wrong, it is impossible to buy VIDA access from Europe Sad
Also not sure if I already have it, any way to check?

The upgrade includes curve speed assist. If you have that button on the functions tab, then you already have it.  
As far as I know,  you can purchase VIDA but cannot order software and some authorized service can order for you and add it to your account. May be I am wrong that's what I heard.  
You just might need to calibrate the front camera behind the mirror.

Curve speed assist can be enabled using orbit, but I don't have it from the factory...
I will try to find somebody who can add software. I believe there is one person on another forum that I follow, but I always thought a 3-day subscription could be bought only from the USA.

Curve speed can be enabled but the software must support it.  I enabled it on My officially upgraded ACC / PA (replaced the unit and installed it via VIDA) but never saw it working. Maybe the roads in CA / USA are not all included, I don't know.  
Be very careful with installing the software. The PA software is in the BSM, CEM and some other modules. If you install a wrong software your car won't even start. 
Go to a dealer and just get a quote for upgrading officially.
