Checking thermostat functionality

Update: I never did find any DIDs specifically showing that the thermostat was opening or closing, but I didn’t look at every parameter and could have missed it. But I did end up replacing my thermostat assembly and my car is now running much warmer and hovering around the 195F mark. The old one was not closed when I pulled it, so it was definitely the issue. It was an easy job, but time consuming because you have to pull the intake manifold. The hardest part was opening the radiator drain and vacuum filling it back up. That and figuring out who will take my old coolant.
