Again from what I understand these changes are not to actual boolean or integer values but instead a modification of the program flow the car uses to read the "stock" values. So because Orbit manipulates the actual process, any changes made can just be "wiped" by essentially telling the car to revert to the default method for retrieving stock values and forget the OrBit method.
I'm unsure how the modification is implemented, it could be that OrBit changes are tagged in some way so when you click restore to OEM OrBit is essentially saying find all process's containing "OrBit" tag and delete. Or if there is some sort of seperation between OrBit and stock code and the extra stuff can just be "detached". This we may never know though as Power6, understandably, may want to keep his special sauce to himself.
